Jalapeno-Stuffed, Bacon-Wrapped Dates
10-12 slices Bacon
20-24 Dates, pitted
1/3 cup Mascarpone Cheese
½ teaspoon Chili Powder
¼ teaspoon Cumin
1 Jalapeño, thinly sliced
Preheat oven to 375 degrees Fahrenheit. Line a rimmed baking sheet with aluminum foil.
In a small bowl, mix together mascarpone cheese, chili powder, and cumin. Set aside.
Make a small cut into the date but do not slice all the way through. Pull apart slightly. Repeat with all of the dates. Spoon a small amount of the mascarpone cheese mixture into each date and place a slice of jalapeño in the middle of the date. Close the date so that the mixture and jalapeno is enclosed. Wrap each date in a piece of bacon so that the bacon wraps around the date 1.5 times. Place seam-side down on the baking sheet.
Roast in the oven for 10 minutes. Using a toothpick, rotate the dates slightly. Roast for another 10 minutes. Rotate the dates an additional time and roast for 8-10 minutes. At the point all sides of the bacon should be cooked. Garnish with a slice of jalapeño to serve.
