I love peanut butter, accessible protein, and quick recipes. Combine these three and, voila: the ultimate snack recipe is born! There’s no oven to heat, minimal prep time, and these little protein bombs will satisfy kids and adults alike.
Ingredients
1 cup rolled oats
1/2 heaping cup smooth peanut butter
1/4 cup maple syrup
1/4 cup mini chocolate chips
1/4 cup hemp seeds
1/4 cup chia seeds
pinch sea salt
Directions
Combine maple syrup and peanut butter (or nut butter of your choice) into a large bowl. Whisk until smooth. Fold in remaining dry ingredients.
Line a casserole pan with parchment paper. Using your hands, roll up individual balls roughly the size of a golf ball. Place onto the parchment paper. Cover and refrigerate for an hour OR just go ahead and eat them! Keep refrigerated for a firmer texture or if you live in a warm environment.
