Valentine’s Day falls on a Tuesday this year, which is truthfully a little bit awkward. Are you supposed to celebrate in the morning or at night, when you’re tired from a long work day? Who really wants to go all out on a Tuesday, anyway? We’ve decided to celebrate all weekend long, particularly with these four recipes from Pig & Khao Chef Leah Cohen. Try your hand at cooking breakfast at home, and have it in bed for two! Not only are these recipes delicious, but they’ll double as gifts. Read below for her recipes; your Valentine is bound to love them.
Egg in a Hole with Tomato Jam
Tomato Jam Recipe:
1 ½ lbs ripe tomatoes cored and coarsely chopped
1/2 cup sugar
4 tbs freshly squeezed lime juice
1 tsp ground cumin
¼ tsp ground cinnamon
2 tsp salt
Pinch of Thai chili flakes (cayenne or Italian red pepper flakes) or more depending on preference
Combine all ingredients in a medium saucepan. Bring to a boil over medium heat constantly stirring and then reduce to a simmer until nice and thick. Adjust seasoning.
Egg in a Hole Recipe:
2 inch thick piece of good country bread (or your favorite bread of choice)
1 large egg
2 tbs unsalted butter (softened)
Salt and pepper for taste
Pre-heat broiler in oven. Use a cookie cutter in the shape of a heart to cut a hole in the middle of the bread. Save the removed portion of bread to toast and eat with the dish. Crack the egg in a cup or bowl to have ready. Lightly butter both sides of the bread. Heat a non-stick large sauté pan, add remaining butter and toast one side of the bread (and the cut out heart if using). Once the first side is nicely toasted, flip the bread over and gently pour the egg in the heart hole. Season this salt pepper and pecorino. Once the egg white starts to set place the pan under the broiler so the egg and cheese cook. Serve with tomato jam.
Banana Bread Pancakes With Nutella Syrup and Whip Cream
1 cup AP flour
1/2 tsp salt
2 tbs light brown sugar
1/2 cup milk
3 ripe bananas mashed
1/2 tsp ground cinnamon
1 tsp vanilla extract
Combine all wet ingredients in a bowl and all dry ingredients in a separate bowl. Add the wet ingredients into the dry ingredients and mix until everything is incorporated.
Heat a lightly oiled griddle or non-stick frying pan over medium heat. Scoop the batter onto pan using about 1/4C for each pancake. Cook on both sides for approx. 3 minutes.
1/3 cup Nutella
1/4 cup milk
1 tbs sugar
Combine all ingredients together in a saucepot and heat enough so everything melts and the mixture is smooth.
2 oz of coconut milk
2 oz whole milk
1 shot espresso
1 oz of rum or Irish whiskey
1 tbs toasted coconut flakes
Mix the milk with the coconut milk. Steam the milk with a cappuccino machine or froth it while warming over a burner. Make 1 shot of espresso. Mix espresso with rum or whiskey slowly pour the foam over the espresso shifting back and fourth and pull through to make a heart design. Top with coconut flakes.
Blood Orange Mimosa
1 ounce fresh squeezed blood orange juice
1/4 ounce Triple Sec
Champagne or Prosecco
Pour juice and triple sec into glass. Top with champagne and garnish with a blood orange wedge.
