Strawberry Rosé Popsicles

These popsicles are creamy, sweet from the strawberries, and of course packed with that delicious rosé flavor.  They’re also beautiful, and will wow all of your friends (while helping them get tipsy!).  Strawberries, beyond pairing beautifully with pink wine, are packed with Vitamin C and collagen, which will help protect your skin and keep it glowing in the summer sun.


½ cup coconut milk

½ cup rosé of choice

2 tablespoons honey

¼ teaspoon vanilla powder or ½ teaspoon vanilla extract

3 cups strawberries, hulled (can be fresh or frozen)


Separate out 2 cups of the strawberries and cook in a small saucepan over low heat, mashing periodically with a wooden spoon and stirring occasionally, for 10 – 15 minutes, until juices have all released and mixture is mostly liquid, with a bit of strawberry texture.  Blend remaining 1 cup of strawberries with coconut milk, rosé, honey, and vanilla.  Layer creamy mixture with strawberries in popsicle mold, going about 2 teaspoons at a time (you can also use Dixie cups, or even plastic Champagne cups); it’s okay if the layers blend together a bit, as that creates the pretty swirled effect!  Freeze for one hour, then insert popsicle sticks and freeze for an additional 5 – 6 hours or overnight.  To serve, run under warm water for 5 – 10 seconds, then gently remove from mold.  Once unmolded and stored in a plastic bag, these will keep for up to 2 months in the freezer.  Makes 6 3 oz popsicles.
