Okay potatoheads, a new column and Instagram party has officially begun and it’s called #yournewpotato. On her ideal food day…

On a perfect food day I would start with my favorite “Apple Pie” oats. It sounds over-the-top and complicated but it’s just oatmeal cooked with almond milk, cinnamon, and a banana and topped with apples that I let simmer in water and cinnamon for about five minutes until they’re soft. Sometimes I add raisins and walnuts, sometimes I don’t, but either way it ends up tasting like warm apple pie and it’s my absolute favorite way to start the day. I make it several times a week. Lunch is almost always a heap of mixed greens topped with a sweet potato and dinner would ideally be vegan Indian food every night. Rice, dhal, salad, and lots of hot sauce!

On beauty from the inside out…

I used to think that people who stuck to routines were rigid and unadventurous, but I’m learning that creating healthy habits and sticking to a routine is key to feeling my best in every area of my life. Consistency is everything.

On why this photo is her new potato…

This picture was taken during a morning walk in Capri. I woke up early to explore the island before it became too crowded with tourists and it ended up being one of my favorite parts of the trip. That’s a big travel tip of mine: Get up early, put on comfy shoes, and just start walking! It’s the best way to get a feel for a new place.
