Peach Cobbler


4 1/2 cups Peaches, peeled and cut into slices

1 cup Sugar

2 teaspoons Lemon Juice

1 teaspoon Vanilla Extract

Pinch of Salt

1 cup Flour

1/2 cup Old Fashioned Oats

1/4 cup Sugar

1 1/2 teaspoon Baking Powder

1/2 cup cold Butter, cut into cubes

1 cup Milk


Preheat oven to 375 degrees Fahrenheit.

In a bowl, combine peaches, sugar, and vanilla extract. Stir to mix well. Pour into a greased baking dish.

In a bowl, whisk together flour, oats, sugar, and baking powder. Cut in the cubed butter into the flour mixture so that pea sized pieces are left.  Stir in the milk to bring together the dough. Spread over the peach filling in the baking dish.

Bake for 35 to 40 minutes. Filling should be bubbly and the crust should be golden brown on top. Serve with vanilla ice cream.
