Peach and Ginger Jam

Ingredients:

2 1/2 cups Peaches, peeled and chopped, divided

2 tablespoons fresh Ginger, grated

2/3 cup Sugar

Directions:

In a blender, combine 2 cups peaches and fresh grated ginger. Puree until mostly smooth. Pour into a small sauce pan with sugar and remaining peaches. Bring to a boil while stirring to dissolve the sugar. Reduce heat to a simmer. Simmer for 5-10 minutes, until mixture has thickened. Pour into clean, sterile jars. Serve on toast or over goat cheese with crackers.
