Okay potatoheads, a new column and Instagram party has officially begun and it’s called #yournewpotato. Each week, we’ll be picking our favorite Instagram to post on our site AND Instagram, that answers the question “What’s your new potato?” Just make sure to tag us @thenewpotato and use the hashtag #yournewpotato.

This week’s winner is NYU student @eatwithami whose image and caption caught our eye when she said “I decided to travel to Paris alone on Thursday even though my friends would be arriving on Saturday…” A girl after our own hearts…

On who she is…

I am a junior at NYU majoring in Nutrition and Food Studies, and I am currently studying abroad in Madrid for the semester. I’ve been taking advantage of being in Europe by traveling a bunch, and of course documenting all the amazing food I find along the way.

On her ideal food day…

I’d have to say that my ideal food day would start with a homemade breakfast – nothing too crazy, something like oatmeal, a smoothie or some peanut butter and banana toast. Other than that, I love trying new foods and going out to eat at restaurants, cafes or a local market with friends – ones with cute decor and natural light or outdoor seating are always a plus.

On how she practices beauty from the inside out…

I’d say I’m a pretty social person, but I definitely need some down-time to myself to recharge. I like to reflect on my experiences and I find that doing so allows me to give my full attention to the people I encounter, and this way I am more able to share myself and my passions with them. I guess this is one way I practice beauty from the inside out 🙂

On why this particular Paris photo was her new potato… 

This past weekend, I went to Paris for the first time and I met up with a bunch of friends who are studying abroad around Europe as well. This photo of the meal was my ‘new potato’ because it was a captured moment in time where people who come from different backgrounds were in one place at the same time, creating a communal experience.
