Salmon Skewers with Asian Marinade

Super easy and quick, we love serving over soba noodles or coconut rice.

Prep Time:  10 minutes + marinade time

Cook Time:  5 minutes

Ingredients: 

Marinade:

1 tablespoon Fire & Flavor Asian Rub

1½ tablespoons low-sodium soy sauce

1½ teaspoons sesame oil

1½ tablespoons vegetable or grapeseed oil

1 teaspoon honey

1½ pounds fresh salmon, skin removed

8 wooden skewers, soaked

Lemon or lime wedges for serving

Directions:

Combine Asian Rub, soy sauce, sesame oil,  vegetable oil, and honey in a medium bowl.  Cut salmon into 1½-2-inch cubes and toss with marinade.  Refrigerate for 15 minutes. 

Preheat grill or grill pan to medium-high heat.  Skewer salmon onto wooden skewers and grill for 2 minutes per side until barely cooked thru. 

Squeeze lemon or lime over salmon and serve immediately.
