Sausage, Egg, and Cheese Sandwich
Makes: 1
Ingredients:
1 Whole Wheat English Muffin
Butter, softened
1 Spicy Sausage Patty, cooked and warm
1/2 tablespoon Coconut Oil
1 Egg
1 ounce Cheddar Cheese, sliced
Hot Sauce, to liking
Directions:
In a skillet, melt coconut oil over medium heat. When hot and shimmering, place egg in the skillet. Cook slowly on medium heat for a few minutes until whites are set but egg is still runny. Meanwhile, toast the english muffin and spread butter on each half. Place half of the cheese on the bottom english muffin, top with fried egg and sausage patty and more cheese. Drizzle with hot sauce and place top half on top to serve.
Southwestern Breakfast Melt
Makes 1
Ingredients:
1 slice Brioche bread
1 teaspoon Butter
1 Chorizo Sausage Link, cooked and cut into 3 pieces
2 Eggs, lightly beaten
1 tablespoon Cilantro, chopped
1/2 Avocado, cut into Sliced
1 ounce Pepperjack Jalapeno Cheese, sliced
2 teaspoons Chipotle Salsa
Directions:
Preheat the oven to 375 degrees Fahrenheit.
Spray a skillet with non-stick spray and place over medium-high heat. Add the eggs to the skillet and sprinkle with chopped cilantro. Scramble with a spatula. While eggs are cooking, toast and butter the slice of brioche. Place the avocado slices on the piece of toast. Drizzle 1 teaspoon of salsa over the avocado. Next top with scrambled eggs and chorizo. Place the cheese over the chorizo. Put the toast on a baking sheet and place in the hot oven for 2 minutes to melt the cheese. Drizzle with remaining salsa to serve.
Healthy Breakfast Sandwich
Makes: 2
Ingredients:
2 slices Sesame Ezekiel Bread or Gluten-Free Bread
1/2 Avocado
Juice from 1/2 Lemon
2 tablespoons Feta Cheese, crumbled
1/4 cup Roasted Red Peppers, cut into strips
1/2 cup Egg Whites
Cracked Black Pepper, for sprinkling
Sea Salt, for sprinkling
Directions:
Toast the bread and smash 1/2 of the avocado on to each toast. Sprinkle with sea salt and drizzle with lemon juice. Top with feta cheese. Spray a skillet with nonstick spray. Place over medium-high heat. When the skillet is hot, add the egg whites. Scramble with a spatula. Divide the scrambled egg whites evenly between the toasts. Sprinkle with cracked black pepper and roasted red peppers to serve.
