Peach, Kale, and Goat Cheese Salad

Ingredients:

1 bunch Kale, stems removed, torn into bite-sized pieces

1 tablespoon Shallot, minced

2 Peaches, cut into slices

1/3 cup crumbled Goat Cheese

1/4 cup Sunflower seeds, toasted

2 tablespoons fresh Lemon Juice

3 tablespoons Extra Virgin Olive oil

Salt, to taste

Pepper, to taste

Directions:

Whisk together lemon juice, olive oil, shallots, salt, and pepper. Massage the kale gently with the dressing.  Toss with peaches, goat cheese, and sunflower seeds.
