How To Make Homemade Ice Cream

We don’t know what it is, but there’s something super impressive about making ice cream at home. There’s also something about making it homemade that makes it seem healthier…or is that just in our heads? Here are a few go-to recipes you need to add to your weekly summer repertoire…

Strawberry Ice Cream

Ingredients:

1 pint + 1 cup fresh Strawberries, hulled and roughly chopped, keep 1 cup sliced to the side.

1/4 cup Sugar

1 teaspoon Vanilla Extract

1 cup Whole Milk

1 1/2 cups Heavy Cream

1/2 cup Sugar

5 Egg Yolks

Directions:

Blend strawberries, vanilla extract, and 1/4 cup sugar until smooth.

Bring milk, cream, sugar, to a boil in a pot.

Beat the eggs in a bowl. Whisk 1/3 pf the boiling milk mixture into the yolks.

Return the remaining milk mixture to the stove. Bring back to a boil.  When it reaches a boil. Slowly whisk in the egg yolk mixture. Boil until mixture thickens enough to coat the back of a spoon.

Strain the ice cream base into a bowl set over ice. Cool quickly over ice. Stir in the strawberry puree. Place in the refrigerator for 1-2 hours. Mixture should be very cold before going into the ice cream maker.  Mix the ice cream, according to your ice cream maker instructions. Just before the churning is complete, add the remaining 1 cup of sliced strawberries for the last few minutes.

No-Churn Coffee Ice Cream

Ingredients:

2/3 cup Sweetened Condensed Milk

1 1/4 cup Heavy Whipping Cream, very cold

2 tablespoons Instant Espresso Powder

2 tablespoons Coffee Liqueur

Directions:

In the base of a stand mixer, combine all ingredients. Using the whisk attachment, beat the ingredients until soft peaks form.  At this stage, if you want to add any additional ingredients such as semi-sweet chocolate chips, fold them in gently.  Spoon into a chilled loaf pan. Freeze overnight, or for at least 8 hours.

Cookies and Cream Ice Cream

Ingredients:

1 1/2 cups Whole Milk

1 1/2 cups Cream

Pinch of Salt

1/2 cup Sugar

1/2 Vanilla Bean, split and scraped

5 Egg Yolks

1 1/2 cups Oreo Cookies, crushed

Directions:

In a heavy bottom saucepan, combine milk, cream, salt, sugar, and vanilla bean

Beat the egg yolks in a bowl. Whisk 1/3 of the boiling milk mixture into the yolks.

Return the remaining milk mixture to the stove. Bring back to a boil.  When it reaches a boil, slowly whisk in the egg yolk mixture. Simmer until mixtures thickens enough to coat the back of a spoon.

Strain the ice cream base into a bowl set over ice. Discard the vanilla bean. Cool quickly over ice and place in the refrigerator for 1-2 hours. Mixture should be very cold before going into the ice cream maker.  Mix the ice cream, according to your ice cream maker instructions. During the last 5 minutes of churning, add in the crushed Oreo cookies. Freeze overnight or for 4-6 hours.

Mint Chocolate Chip Ice Cream

Ingredients:

1 1/2 cups Whole Milk

1 1/2 cups Cream

1 cup Peppermint Leaves, packed

5 Egg Yolks

1/2 cup Sugar

1/2 Vanilla Bean, split and scraped

2 ounces Semi-sweet Chocolate Chunks, either mini or chopped

Directions:

In a heavy bottom saucepan, combine 1 cup milk and the mint leaves. Bring the milk to a boil, turn off the heat.  Let the mint steep for 25-30 minutes.  Strain out the mint leaves, reserving the milk.  Add the minty milk back into the saucepan with the remaining milk, heavy cream, sugar, and vanilla bean. Bring to a boil.

Beat the egg yolks in a bowl. Whisk 1/3 of the boiling milk mixture into the yolks.

Return the remaining milk mixture to the stove. Bring back to a boil.  When it reaches a boil, slowly whisk in the egg yolk mixture. Simmer until mixtures thickens enough to coat the back of a spoon.

Strain the ice cream base into a bowl set over ice. Discard the vanilla bean. Cool quickly over ice and place in the refrigerator for 1-2 hours. Mixture should be very cold before going into the ice cream maker.  Mix the ice cream, according to your ice cream maker instructions. Directions:
