Our beach trips (and summer existence in general) are always about balance; maintaining a glow without getting sunburnt, and beautifying both from the inside and out in ways that are both healthy and rewarding. Here are four easy go-to’s (that can oscillate between breakfast, lunch and dinner) for the week leading up to your beach weekend. They also keep well, meaning you should bring them with you to snack on at the beach.

Cherry Limeade Smoothie

Ingredients:

1 cup Frozen Cherries

2 tablespoons Lime Juice

1 tablespoon Camu Camu Powder

2 teaspoons Agave Nectar

1 tablespoon Chia Seeds

1/4 cup Ice

Directions:

Blend all ingredients together for 1 minute.  Keep cool until ready to drink.

Peach, Kale, and Goat Cheese Salad

Ingredients:

1 bunch Kale, stems removed, torn into bite-sized pieces

1 tablespoon Shallot, minced

2 Peaches, cut into slices

1/3 cup crumbled Goat Cheese

1/4 cup Sunflower seeds, toasted

2 tablespoons fresh Lemon Juice

3 tablespoons Extra Virgin Olive oil

Salt, to taste

Pepper, to taste

Directions:

Whisk together lemon juice, olive oil, shallots, salt, and pepper. Massage the kale gently with the dressing.  Toss with peaches, goat cheese, and sunflower seeds.

Berry Basil Salad

Ingredients:

1/2 cup Blueberries

1/2 Blackberries

1/2 cup Strawberries

1/2 cup Raspberries

1 tablespoon Lemon Juice

1 tablespoon fresh Basil, chopped

Directions:

Stir all ingredients together.  Let sit for 20 minutes before serving.

Cucumber Basil Water Infusion

Ingredients:

4 cups Cold Water

2 cups Cucumber, thinly sliced

2 sprigs fresh Basil, lightly crushed

Directions:

In an air tight container, combine water, cucumbers, and crushed basil. Seal the container tightly with a lid. Refrigerate for 8 hours or overnight.  Do not let the cucumbers and basil infuse for more than 2 days. Enjoy over ice.

The Day of The Beach

So your skin’s clear from all the Tea Tree action, your legs and face have a natural tan, now all that is left to do is prep and beautify your skin the morning of.

For your skin…
