Happy Meatless Monday! We teamed up with our friends over at Gardein to grill up everything BUT beef. The moral of the story is, there’s no reason to feel left out at barbecues anymore if you don’t eat meat, or just aren’t feeling like it that day. Gardein makes all their meals and snacks from plants, and up this week we came up with a killer beefless shish kebab recipe using their tips (tips meaning beefless tips, not advice).
Topless beaches? More like beefless shish kebabs…say that ten times fast.
Grilled Beefless Shish Kabobs with a Soy-Chili Dipping Sauce
1 package Gardein Beefless Tips, defrosted
1 Red Bell Pepper, cut into 1 inch pieces
1 Green Bell Pepper, cut into 1 inch pieces
1 Orange Bell Pepper, cut into 1 inch pieces
1 Yellow Squash, cut into 1 inch pieces
1/2 Red Onion, cut into 1 inch wedges
1 tablespoon Olive Oil
1/2 cup Tamari or Soy Sauce
2 tablespoons Chili Sauce
1 tablespoon fresh Lime Juice
6 Wooden Skewers, pre-soaked
On each skewer, alternate place 1 beefless tip then 2 pieces of vegetables until there are 4 beefless tips per skewer. Heat grill or grill pan over medium-high heat. Brush grill with olive oil. Place skewers on the grill. Cook for 5-7 minutes, turning every 2 minutes. While skewers are on the grill, whisk together tamari, chili sauce, and lime juice.
Serve skewers on a platter with dipping sauce.
