Almond Balsamic Fig Ice Pop

Makes 6 Ice Pops

2 cups almond mik, unsweetened

1/4 cup balsamic vinegar

4 tbsp maple syrup

1 tsp vanilla extract

6 figs, thinly sliced

In a small saucepan over medium heat, bring balsamic vinegar, maple syrup, and vanilla extract to a gentle simmer. Reduce the mixture until it has become sweet and syrupy. Divide the sliced figs evenly among ice pop molds.  Stir balsamic reduction into almond milk and pour over figs. Freeze for 4-6 hours.
