Corn Pudding

Serves 4


1 10 oz. box frozen corn or 3 ears scraped corn (2 cups)

3 eggs

1/4 cup sugar

1 cup whipping cream

1 tsp salt

butter for dotting on top


Preheat oven to 350 degrees. If using frozen corn, whiz in processor or blender until coarsely chopped. Mix corn, eggs, sugar, cream and salt. Put in casserole and dot with butter. Cook for 40-50 minutes. If recipe is doubled or tripled, cooking must be extended. May mix ahead and store in refrigerator. Stir before baking.
