Quinoa Salad

quinoa caprese salad


1 cup uncooked quinoa

1 tomato

1 avocado

1/2 red onion

1 tablespoon chopped parsley

1 tablespoon chopped basil

Parsley and basil for garnish

Juice of 1 lemon

2 tablespoon of olive oil

Salt and pepper to taste


1. Boil 2 cups of water. Once boiling, add 1 cup of quinoa, bring to a boil, and cover for 10-12 minute on medium heat, or until water is absorbed.

2. Chop some tomato, avocado, red onion (optional), parsley and basil.

3. Once quinoa is cooked, mix in a large bowl with olive oil, lemon juice, garlic salt, salt and pepper (to taste).

4. Add vegetables and mix well.

5. Plate and enjoy!
