If you follow us on Instagram, it’s no secret that we love a good emoji. (If you don’t follow us, what are you waiting for?) So, we reached out to New York’s coolest baker, Amirah Kassem of Flour Shop, to share her special recipe for Emoji cookies! Is there a better way to tell someone you love them? (Or not – the add ons don’t need to be hearts…) We don’t think so.
<3 Heart Eye Emoji Cookies <3
2/3 c butter
1/2 c sugar
1 3/4 c flour
1/2 tsp baking poweder
1/4 tsp salt
Preheat oven at 400
In a food processor, mix the butter and sugar until creamy.
Add the egg and mix until fluffy
In a seperate bowl whisk the flour, baking power and salt.
Then slowly add the dry mixture into the processor until the dough is smooth.
Roll out the dough on a floured surface.
Cut into circles and mini hearts.
Bake for about 6-8 minutes.
Transfer to a wire rack until cool.
For the icing:
2 c confectioner’s sugar
1 1/2 tbs meringue powder
1/4 tsp vanilla extract
1/4 c warm water
Combine all the ingredients in a bowl.
Beat on medium speed until fluffy.
Separate into 3 small bowls.
Using food coloring, dye the icing yellow, one red and the third black.
Once the cookies have cooled, decorate away! You’ll have your valentine looking like the (heart eye) emoji!
