What began as a recipe for serving quail, State Bird Provisions has evolved into an award-winning yet relaxed restaurant that pairs local bounty with exotic spices, served dim-sum style.  It’s a “recent favorite” of Andrea Cavaliere, the chef who oversees every Soho House in the US and calls their signature quail dish “perfection”.  Michael Chiarello of Top Chef Masters says State Bird dished out “one of the tastiest meals I’ve had in a long time”.
